MIX CRUST
1½ cups graham cracker crumbs
6 Tablespoons salted butter melted
1-2 tablespoons granulated sugar (optional)
1 teaspoon lemon zest
PRESS into PARCHMENT PAPERED 8X8 pan
BAKE shell for 10 minutes at 350 degrees
COOL pie shell completely then WHISK:
2 egg yolks
One 14 ounce can sweetened condensed milk (approx 1¼ cups)
WHISK IN:
½ cup fresh lemon juice - amount in lemons appprox 3 lemons
1 teaspoon lemon zest
FOLD IN:
6 ounces fresh blueberries (approx 1 cup)
POUR filling over the shell and BAKE 15-20 minutes (just set).
RACK COOL then WRAP and REFRIGERATE for 2 hours
DUST with powdered sugar and SERVE
