SOAK COVERED overnight
100 g finely chopped nuts, roasted (65 g walnuts + 35 g pecans, roasted)
60 g strong bourbon
20 g Cointreau
ADD
(250 g) 2 cups graham cracker crumbs (about 5 snickerdoodles)
40 g powdered sugar
40 g maple syrup
2 t orange zest, finely chopped
1/2 t ginger
1/2 t cinnamon
1/4 t cardamom
1/4 t allspice
1/4 t salt
1/8 t cloves
1/8 t black pepper
ROLL into 16 balls then FREEZE
DIP into chocolate bath
300 g semi-sweet chocolate, melted in microwave for 4 minutes on 50%, stirring occassionally
STIR in 60 g chocolate chips to temper
SPOON ROLL then SALT
