AUTOLYSE 10 MINUTES then ADD salt. STAND MIX 10 MINUTES (4/5/4). BULK RISE for about 60 minutes. SHAPE and PROOF in prepped pan for about 30 minutes. BRUSH with BUTTER then BAKE (lower rack) at 375 degrees for about 35-45 minutes (FOIL the top after 20 minutes) to reach 205 degrees internal temperature. BRUSH with butter and STEAM COOL at least 3 hours then SLICE.
