MIX GLAZE
1/4 cup apple cider vinegar
1/4 cup orange or apple juice
35 g brown sugar
1 T grain mustard
1/2 T tamari
Pinch of cayenne pepper
2 boneless pork chops, dried, slits on fat
S&P
SEAR pork chops 5 minutes then flip, fry one more minute then PLATE and pour off grease
RETURN chops to pan, seared side up, and POUR in GLAZE
ADD and REDUCE for about 5 minutes (internal 140 degrees)
