MIX DOUGH and FOLD for 1 hour after 1 hour autolyse: 2-15 minute spoon folds (50 stroke reps), 2-15 minute hand folds (5-fold reps).

5 g honey (3.4%)
130 g Pizza Flour Mix
5 g olive oil (3.4%)
4 g salt (2.8%)
COVER dough and REST for 12 hours
TURN OUT and REFRIGERATE at least 3 hours
BENCH REST 2 hours out of fridge prior to FIRING at 850 degrees for about a minute.
