CREAM and MIX:
1 stick butter, soft
100 g sugar
100 g brown sugar
2 eggs
250 g bananas (thaw about 2-hours if frozen)
75 g sour cream
2 t vanilla
1/2 t orange zest, finely chopped
100 g cranberries or blueberries
40 g walnuts
WHISK then ADD to batter:
175 g AP flour
50 g Wheat Flour, sifted
1 t soda
1 t salt
1.5 t cinnamon
1/8 t nutmeg
1/8 t cardamom
1/4 t allspice
BAKE at 350 for 60-minutes, TENT, then continue baking for 20-minutes (195-degrees internal temp).
TOP with SALT or NATURAL SUGAR after 15-minutes of baking -- OR -- CRUMBS during the last 10-minutes of baking
