MIX then AUTOLYSE 30 minutes
50 g Teff, cooled (TOASTED and COOKED 15 minutes 160 g water then STEAMED 5 minutes) OR 50 g bulgur wheat (steeped 10 minutes in 85 g water and cooled)
335 g water (170 g water + 115g coffee + 50 g cream)
15 g sesame seeds
5 g vanilla
30 g brown sugar
505 g NEW Bubble flour
75 g AP flour
3 g cocoa powder
1 T yeast
ADD:
5 g water
12 g salt
MACHINE KNEAD 5 minutes, REST 5 minutes, then KNEAD 5 minutes
PROOF in BOX for about 60 minutes
SHAPE and LOAF PAN PROOF in BOX for about 30 minutes, glaze with milk and butter
RE-GLAZE and BAKE for 50 minutes at 360 until a temperature of 195 degrees
RE-GLAZE and REST in pan for 10 minutes
STEAM COOL at least 2 hours
