8-1/4 pint jars
PUREE until SMOOTH then HEAT to SIMMER then OFF HEAT REST
2# tomatoes, skinned, trimmed, seeded, diced (3.25# whole)
100 g tomato paste
3 cloves garlic, crushed
1/2 T red vinegar
1/2 T salt
1/2 T dried basil
1/2 T dried oregano
1 t honey
1/2 t smoked paprika
1/4 t garlic grains
1/4 t fennel powder
1/4 t rosemary powder
1/4 t chipotle powder
1/4 t pepper
ADD:
3/4 t bottled lemon juice per jar
SIMMER SAUCE then JAR and PROCESS 20 minutes in canner
REST 5 minutes OFF HEAT in canner
REST 12 hours
