SPICED NUTS (MAKE SYRUP then BAKE at 35-degrees for 10-minutes then STIR and BAKE 5 more minutes)
2 T spiced rum
2 T sugar (25 g)
1/4 t salt
1/4 t cinnamon
1/4 t ginger
1/8 t cloves
1/8 t nutmeg
60 g roasted pecans
60 g roasted walnuts
CREAM
1 cup (2-sticks) butter, room temp
90 g powdered sugar
1/2 t cardamom
1/2 t orange zest
1/2 t salt
ADD and CREAM
1 T spiced rum
ADD and MIX on LOW
260 g AP flour
ADD and MIX on LOW
SPICED NUTS, BLITZED to COARSE MEAL
CHILL DOUGH 1-hour
ROLL into 24-balls then ROLL in CINNAMON SUGAR (50 g sugar, 1 t cinnamon, 1/8 t cardamom)
BAKE at 350-degrees for 15 to 20-minutes
COOL on RACK 10-minutes
ROLL in POWDERED SUGAR and COOL
