FRY the bacon.
90 g bacon
FRY onion and pepper with bacon about 2 minutes

ADD stock then bacon:
1.5 cup chicken stock
25 g raisins
NESTLE chicken (skin side down) and COVER
2 bone-in chicken thighs, salted
BAKE at 325 for 1 hour then REMOVE chicken
COVER sauce and SHRED chicken
ADD chicken to sauce then REST 1 hour

DICE and SLICE veggies then SAUTE 2 minutes
1/4 cup diced carrot
1/4 cup peas
2 scallions
30 g cashews
ADD rice and STIR
SERVE chicken over rice
