COOK cauliflower 9 minutes (**reserve 1/2 cup water**)
1/2 cauliflower, flowerets
DRAIN cauliflower and set aside
SAUTE about 2 minutes:
1 T olive oil
2 T onion, minced
3 cloves garlic, crushed
1/2 t oregano
1/2 t basil
1/2 t salt
1/4 t pepperĀ
1/4 t Aleppo pepper
ADD cauliflower and SAUTE 1 minute.
BLITZ smooth
Cauliflower mixture
200 g milk
1 t lemon zest
pinch nutmeg
OVER LOW HEAT, ADD cheese to cauliflower puree and cook 1 minute.
90 g cream cheese
30 g provolone
TOSS with pasta
8 oz fettuccine, cooked
2 T parsley, minced
