Omega-6 Fats

Omega-6 polyunsaturated fatty acids contain their first double bond at the sixth carbon in their molecular structure. Like omega-3 fatty acids, we cannot make omega-6 fatty acids. These can be found in sources such as vegetable oils, including those used in fried and processed foods. Therefore, unlike omega-3s, we need to be careful to consume omega-6 fatty acids in moderation, on the order of 5 percent to 10 percent of calories or 12-22 grams per day. Unfortunately, as a whole, Americans consume much larger amounts than this which can actually lead to worsening of inflammation, promoting chronic disease such as heart disease and diabetes. In general, while we should not avoid omega-6 fatty acids completely, we should try to limit intake considerably.
