Zucchini Meatloaf
What you need:
- 2 eggs, slightly beaten
- 2 cups shredded zucchini
- 1/3 cup bread crumbs
- 1/3 cup chopped onion
- 1 tsp. salt
- 1/2 tsp. dried oregano leaves
- 1/4 tsp. pepper
- 1 1/2 lb. lean ground beef
Directions:
- Heat oven to 350. Mix all ingredients together and press into a loaf pan.
- Bake for 45 to 50 minutes, or until cooked all the way through.
