Soft & Crispy Steak Tacos
What you need:
- 1 tsp. olive oil
- 1 lb. NY strip steak
- 1 small onion, diced
- 1 jalapeno, remove seeds and ribs, diced
- 8 oz. tomato sauce
- 1 tsp. cumin
- 1 tsp. garlic
- 1 tsp. chipotle/ancho chili powder
- Juice from 1 lime
- Salt and pepper
- 8 (6 inch) flour tortillas
- 8 hard shell tortillas
- Refried beans, heated
- Spinach
- Cheddar cheese
- Salsa, if desired
Directions:
- Heat oil over medium-high heat. Season strip steak with salt and pepper.
- Sear steak 2 minutes on each side and then remove to let rest for 5 minutes.
- Add onion and jalapeno and cook over medium-low heat until onions are softened.
- After your steak has rested 5 minutes, slice into strips.
- Add steak plus tomato sauce, cumin, garlic, chili powder, and lime juice. Cook for 5 to 10 minutes or until steak is to desired doneness.
- Meanwhile, take your hard shell tortillas and spread refried beans on the outside. Take a soft shell and wrap it around the hard shell. Repeat with all tortillas.
- Fill with meat mixture and top with spinach, cheese, and salsa or other desired toppings!
