Snickerdoodle Muffins

What you need:

    • 2 cups flour
    • 2/3 cup sugar
    • 2 1/2 tsp. baking powder
    • 1/2 tsp. salt
    • 1/4 tsp. nutmeg
    • 1 egg, beaten
    • 1 cup + 2 Tbsp. milk
    • 6 Tbsp. unsalted butter, melted and cooled
    • 1 tsp. vanilla

Cinnamon-Sugar Mixture:

    • 1/2 cup sugar
    • 1/2 tsp. cinnamon
    • Nutmeg
    • 2 Tbsp. butter, melted and cooled

Directions:

    1. Whisk together flour, sugar, baking powder, salt, and nutmeg. Make a well in the center.
    2. In a bowl, mix beaten egg with milk, butter, and vanilla.
    3. Add wet to dry ingredients and mix gently.
    4. Fill a paper-cup lined muffin tin.
    5. Bake at 375* for 15 minutes. Rotate and cook for another 5 to 7 minutes. Cool.
    6. Mix together sugar, cinnamon, and a pinch of nutmeg. Dip cooled muffins in butter and then into cinnamon-sugar mixture.
