Texas Steak Hash
What you need:
- Steak
- Chili powder
- Garlic powder
- Pepper
- 3 large Idaho potatoes, cubed
- 1/2 stick butter
- 2 green bell peppers, cut into strips
- 1 onion, diced
- 8 flour tortillas
- 1/4 cup butter
- 1/2 cup flour
- 1 1/2 cups milk
- 1/2 habanero, finely diced
- 1 red bell pepper, finely diced
- 2 cups cheddar cheese
- 4 to 8 eggs [depending on if the person wants 1 or 2]
- Tomato, diced, for garnish
- Avocado, diced, for garnish
Directions:
- Season steak with chili powder, garlic powder, and pepper. Sear to desired doneness and slice into strips.
- Fry potatoes in a skillet in the 1/2 stick butter - season with salt and pepper. Remove and keep warm.
- In the same pan, cook green bell peppers and onion until onions are translucent.
- Fry tortillas until golden brown.
- Melt 1/4 cup butter in a medium saucepan. Add flour slowly and stir until smooth. Cook for 5 minutes, stirring constantly.
- Slowly add milk and cook until thick. Add habanero and red bell pepper. Stir in cheddar cheese.
- Fry up eggs - hard or soft yolk, doesn't matter as long as it's what you want!
- Reheat up steak, potatoes, and pepper/onion mixture together, if needed. Season again, to taste.
- On each plate, serve 2 tortillas topped with steak mixture and then fried egg(s). Drizzle with cheese sauce. Garnish with tomatoes and avocado.
