Western Omelet
What you need:
- 1/2 cup finely diced green bell pepper
- 1/3 cup cubed cooked potato
- 2 slices bacon, diced and cooked
- 1/4 tsp. oregano
- 2 tsp. butter
- 3 eggs, beaten with 1 to 2 tbsp. milk
Directions:
- Prepare pepper, potato, bacon, and eggs.
- Melt butter over medium heat in an 8-inch skillet.
- Add eggs and lift edges until almost set.
- Add pepper, potato, and bacon to half. Sprinkle with oregano.
- Flip empty half over filling.
- Serve with salsa, if desired.
