Western Omelet

What you need:

    • 1/2 cup finely diced green bell pepper
    • 1/3 cup cubed cooked potato
    • 2 slices bacon, diced and cooked
    • 1/4 tsp. oregano
    • 2 tsp. butter
    • 3 eggs, beaten with 1 to 2 tbsp. milk

Directions:

    1. Prepare pepper, potato, bacon, and eggs.
    2. Melt butter over medium heat in an 8-inch skillet.
    3. Add eggs and lift edges until almost set.
    4. Add pepper, potato, and bacon to half. Sprinkle with oregano.
    5. Flip empty half over filling.
    6. Serve with salsa, if desired.
