Roast Beef & Grilled Onions

What you need:

    • Red onion, thinly sliced
    • 1 to 2 Tbsp. butter, plus some
    • Roast beef
    • Sliced provolone cheese
    • Sliced American cheese

Directions:

    1. Melt butter over medium heat and fry onions until soft. Add roast beef and heat through.
    2. Melt a Tbsp. or so more of butter in another skillet over medium heat.
    3. Add one slice of bread to the skillet and top with cheese, beef and onion, and more cheese. Top with one more slice of bread and fry on both sides until they are golden. Repeat with remaining roast beef, adding more butter to the pan, as needed.
