Buffalo Chicken Bites

What you need:

    • 1 cup chicken, diced and cooked
    • 1/2 cup mozzarella cheese
    • 2 Tbsp. cheddar cheese
    • 1/4 cup hot sauce
    • 4 Tbsp. butter, melted and cooled
    • 2 1/4 tsp. yeast
    • 2 Tbsp. brown sugar
    • 1 cup warm milk
    • 2 1/2 cups flour

Directions:

    1. Combine chicken, cheeses, hot sauce, and butter and set aside.
    2. Proof yeast in warm milk until bubbly and foamy, about 5 minutes.
    3. Place sugar and flour into the bowl of your stand mixer.
    4. Add yeast mixture to mixer and mix until ball forms.
    5. Knead with dough hook for 5 to 7 minutes. Cover and let rest for 2 hours.
    6. Cut dough into 4 portions. Roll into 12-inch ropes. Flatten into 12x4-inch rectangles.
    7. Spread 1/4 of chicken mixture in center of rectangle. Roll up and cut into 12 pieces. Repeat with remaining dough and chicken mixture.
    8. Let rest for 30 minutes on your parchment-lined baking sheet.
    9. Cook at 400* for 5 to 7 minutes.
