Atomic Hashbrowns

What you need:

    • 2 lb. Russet potatoes, peeled, grated, and dried
    • 1 tsp. garlic
    • 1 tsp. paprika
    • 1/4 tsp. cayenne
    • Salt and pepper
    • 2 tbsp. butter
    • 2 tbsp. olive oil

Directions:

    1. Toss potatoes with seasonings.
    2. Add half the butter and half the oil to a pan and heat over medium heat.
    3. Add potatoes and pack them down tightly.
    4. Fry for 5 to 7 minutes.
    5. Flip onto a baking sheet and add remaining butter and oil to empty pan. Add potatoes back to pan, cooked side up, and fry for another 4 to 5 minutes.
    6. Serve cut in wedges.
