Chicken Chimichangas
What you need:
- 1 1/2 cups chicken broth
- 1 cup long grain rice
- 1/2 cup red enchilada sauce
- 1 1/2 onions, chopped
- 6 flour tortillas
- 4 cups chicken, cooked and shredded
- 1 lb. Monterey Jack cheese
- 4 cups refried beans, heated
- 1/4 cup vegetable oil
- Salsa, guacamole, and cheddar cheese, for serving
Directions:
- Cook rice in chicken broth.
- Mix in enchilada sauce and onions. Add chicken.
- Spread beans on each tortilla. Add chicken and rice. Top with Monterey jack cheese. Wrap up tightly.
- Fry in 1/4 cup vegetable oil. Drain on paper towels. Serve with salsa, guacamole, and cheddar cheese.
