Butterbeer

What you need:

For the Butterbeer:

    • 1/3 cup brown sugar
    • 1/4 cup unsalted butter, room temp
    • 2 tbsp. honey
    • 1/4 tsp. ground cinnamon
    • 1/8 tsp. ground nutmeg
    • 1/16 tsp. ground cloves
    • Pinch of salt
    • 3 tbsp. toffee bits
    • 1/3 cup spiced rum
    • 1 cup boiling water

For the Foam:

    • 2/3 cup heavy cream
    • 2 tbsp. sugar
    • 1 tsp. vanilla extract
    • 1/2 tsp. butter

Directions:

    1. Beat together brown sugar, butter, honey, cinnamon, nutmeg, cloves, and salt until smooth.
    2. Stir in toffee bits and then transfer to a large measuring cup.
    3. Add rum, then boiling water. Stir until butter mixture dissolves.
    4. Pour through a sieve to catch any toffee bits that didn't dissolve fully, then divide into 2 mugs.
    5. Whip heavy cream for 3-4 minutes, until it starts to thicken.
    6. Add sugar and keep whipping until soft peaks form, around 3-4 more minutes.
    7. Stir in vanilla and butter, then whip 30 more seconds.
    8. Spoon a heaping dollop of foam onto the top of each mug and mix gently. Serve immediately.
    9. Then wait for your Hogwarts acceptance letter.
