Chocolate Pudding Andes Mint Cookies

What you need:

    • 2 sticks butter, at room temp
    • 3/4 cup brown sugar
    • 1/4 cup sugar
    • 1 (4.2 oz) pkg. Chocolate Pudding mix (it's the bigger box)
    • 2 1/4 cups flour
    • 1 tsp. baking soda
    • 2 eggs
    • 1 tsp. vanilla
    • 1/4 tsp. salt
    • about 20 Andes Mints, chopped
    • 2 cups mini semi-sweet chocolate chips

Directions:

    1. Combine flour, baking soda, and salt in a bowl.
    2. In a mixer, cream together butter and sugars.
    3. Add pudding mix and mix until combined.
    4. Add eggs and vanilla, mix until combined, scraping sides if necessary.
    5. Add flour and mix until combined.
    6. Stir in candies and chocolate chips.
    7. Using a handy little scooper, place dough on parchment paper-lined cookie sheet.
    8. Bake at 350* for 8 minutes. Let rest on sheet for 5 minutes and then remove to a wire rack.
