S'Mores Pancakes

What you need:

Graham Cracker Pancakes:

    • 1 1/4 cups all-purpose flour
    • 3/4 cup very fine graham cracker crumbs
    • 1 tbsp. baking powder
    • 3/4 tsp. salt
    • 3 tbsp. sugar
    • 2 eggs, yolks and whites separated
    • 1 1/2 cups milk
    • 3 tbsp. vegetable oil

Chocolate Syrup:

    • 2/3 cup unsweetened cocoa
    • 1 cup water
    • 1 1/2 cups sugar
    • 1/4 tsp. salt

Marshmallow Sauce:

    • 1 cup marshmallow creme
    • A few tbsp. hot water

Directions:

    1. Combine flour, crumbs, baking powder, salt, and sugar.
    2. Add egg yolks, milk, and oil and stir just until combined.
    3. Whip egg whites to soft peaks. I use my mixer for this. Fold into pancake batter gently.
    4. Cook pancakes over medium heat, about 1/4 cup batter to each pancake.
    5. In a saucepan, whisk together cocoa and water. Add sugar and salt. Cook over medium heat until brought to a boil. Let boil for 3 minutes and remove from heat.
    6. In a small bowl, combine water and marshmallow creme until you get the consistency you want.
    7. Serve pancakes topped with marshmallow sauce and chocolate syrup.
