Streusel Oreo Muffins
What you need:
Muffins:
- 2 cups flour
- 2 3/4 tsp. baking powder
- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 tsp. vanilla
- 1/2 cup milk
- 8-12 Oreos, crushed
Streusel Topping:
- 2 tbsp. flour
- 2 tbsp. granulated sugar
- 2 tbsp. butter, diced
- 4 Oreos, crushed finely
Directions:
- Preheat oven to 375* and prepare muffin pan with paper liners.
- For the streusel, combine flour, sugar, and Oreos. Then cut in butter until it becomes like coarse meal. Refrigerate for 10 minutes.
- While streusel is chilling, whisk together your flour and baking powder.
- In a separate bowl, cream together your butter and sugar.
- Add eggs, one at a time, beating between additions.
- Add vanilla.
- Add flour and mix on low.
- Then add milk and keep mixing until it's combined.
- Stir in crushed Oreos.
- Divide batter in muffin tins, filling 3/4 way up and then sprinkle with Oreo streusel.
- Bake 16-18 minutes.
