Snickerdoodle Pumpkin Bars
What you need:
Snickerdoodle Layer:
- 3 cups flour
- 2 tsp. baking powder
- 1 tsp. salt
- 2 cups brown sugar
- 1 cup butter
- 2 eggs
- 1 Tbsp. vanilla
Pumpkin Layer:
- 1 cup sugar
- 1 stick butter
- 1 cup flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. pumpkin pie spice
- 2 eggs
- 1 1/2 cup pumpkin puree
Topping:
- 2 Tbsp. sugar
- 2 tsp. cinnamon
Drizzle:
- 1 oz. white chocolate, chopped
- 1/4 tsp. pumpkin pie spice
Directions:
- For Snickerdoodle Layer: Stir together flour, baking powder, and salt.
- Stir together brown sugar, butter, eggs, and vanilla.
- Mix dry ingredients into wet and then pour into greased 9x13-inch pan. Even with a spatula.
- For Pumpkin Layer: Cream together sugar and butter.
- Add the rest of the ingredients and pour over snickerdoodle layer and smooth out evenly.
- For Topping: Combine sugar and cinnamon. Sprinkle on top of pumpkin layer.
- Bake at 350* for 33 to 40 minutes. Cool completely.
- For Drizzle: Melt chocolate and add pumpkin pie spice. Drizzle over the top and let it cool and harden.
