Homemade Ketchup
What you need:
- 1 red onion, chopped
- 2 garlic cloves, peeled
- 10 medium tomatoes, roughly chopped
- 1 can tomato paste (I will double this next time - I think the consistency will be more like the store bought ketchup)
- 1 cup brown sugar
- 1/2 cup apple cider or red wine vinegar
- 1 tsp. salt
- Pinch red pepper flakes
Directions:
- Add all ingredients to a slow cooker and cook on low for 6 to 8 hours.
- Let cool and then blend (in batches if necessary). Put in containers.
- Keeps for 2 weeks in the refrigerator and freezes for up to 6 months. Makes approx. 68 to 70 oz.
