Homemade Ketchup

What you need:

    • 1 red onion, chopped
    • 2 garlic cloves, peeled
    • 10 medium tomatoes, roughly chopped
    • 1 can tomato paste (I will double this next time - I think the consistency will be more like the store bought ketchup)
    • 1 cup brown sugar
    • 1/2 cup apple cider or red wine vinegar
    • 1 tsp. salt
    • Pinch red pepper flakes

Directions:

    1. Add all ingredients to a slow cooker and cook on low for 6 to 8 hours.
    2. Let cool and then blend (in batches if necessary). Put in containers.
    3. Keeps for 2 weeks in the refrigerator and freezes for up to 6 months. Makes approx. 68 to 70 oz.
