Sour Cream Blueberry-Blackberry Muffins

What you need:

    • 2 cups biscuit/baking mix
    • 3/4 cup plus 2 tbsp. sugar, divided
    • 2 eggs
    • 1 cup sour cream
    • 1/2 cup fresh or frozen blueberries
    • 1/2 cup fresh or frozen blackberries

Directions:

  1. Combine biscuit mix and 3/4 cup sugar in a medium size bowl.
  2. In small bowl, combine eggs and sour cream.
  3. Stir egg mixture into dry ingredients until combined.
  4. Fold in berries.
  5. Fill muffin cups 3/4 the way full and sprinkle with remaining sugar.
  6. Bake at 375* for 20 to 25 minutes.
  7. Cool for 5 minutes in pan before removing to a wire rack.
