Sour Cream Blueberry-Blackberry Muffins
What you need:
- 2 cups biscuit/baking mix
- 3/4 cup plus 2 tbsp. sugar, divided
- 2 eggs
- 1 cup sour cream
- 1/2 cup fresh or frozen blueberries
- 1/2 cup fresh or frozen blackberries
Directions:
- Combine biscuit mix and 3/4 cup sugar in a medium size bowl.
- In small bowl, combine eggs and sour cream.
- Stir egg mixture into dry ingredients until combined.
- Fold in berries.
- Fill muffin cups 3/4 the way full and sprinkle with remaining sugar.
- Bake at 375* for 20 to 25 minutes.
- Cool for 5 minutes in pan before removing to a wire rack.
