Blueberry Cream Cheese Muffins
What you need:
For the muffins:
- 1/2 cup butter, softened
- 1 1/4 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 2 1/2 cups flour
- 2 tsp. baking powder
- 2 tsp. baking soda
- 1 tsp. salt
- 1 cup milk
- 8 oz. cream cheese, cubed
- 1 1/2 cup blueberries
- 1 tsp. lemon zest
For crumb topping:
(I omitted because I was lazy that morning - no shame)
- 1/4 cup sugar
- 1/4 cup flour
- 2 Tbsp. cold butter, cubed
Directions:
- For muffins: Cream together butter and sugar.
- Add eggs and vanilla.
- Add flour, baking powder, baking soda, and salt.
- Add milk.
- Fold in cream cheese.
- Fold in blueberries and lemon zest.
- Divide into muffin tins.
- For topping: Mix together sugar and flour. Cut in butter.
- Sprinkle topping on the muffins.
- Bake at 350* for 20 to 25 minutes.
