Heidi's Smothered Burritos
What you need:
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1/2 cup water
- 3 Tbsp butter
- 1 onion, finely chopped
- 2-3 cans diced green chiles
- 1 Tbsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp oregano
- 1 cup cream
- 1 1/2 cups chicken broth
- 1/4 cup flour
- 2 cups Jack cheese, shredded
- 10-12 flour tortillas
Directions:
- Preheat to 350. In a skillet, melt butter to saute onions.
- Add chiles and spices, cook for 1 minute.
- Add flour for 1 minute.
- Add broth and cream.
- Cook until thickened, for 10 minutes. Remove from heat and add 1 cup cheese. Stir until melted.
- Mix chicken and half the sauce in a large bowl.
- Place chicken in tortilla and roll. Place seam side down in a 9x13x2-inch baking dish.
- Cover with other half sauce and sprinkle 1 cup cheese.
- Bake for 20 minutes.
