Mexican Chicken
What you need:
- Chicken breasts
- 1 cup yellow cornmeal
- 1 cup flour
- 1 pkg. taco seasoning
- 2 eggs
- 1/4 cup oil
- 3 Tbsp. butter
- Green onions
- Monterey Jack cheese
- Sour cream
- Salsa
- Cilantro
Directions:
- On one plate, combine cornmeal, flour, and taco seasoning. In a bowl, whisk together with eggs, salt, and pepper.
- Heat oil and butter over medium-high heat in a skillet.
- Dip chicken in eggs and then cornmeal mixture. Cook chicken until golden brown on each side.
- Place green onions on the cooked chicken and then top with a few slices of cheese. Broil until cheese is melted. Then top with cilantro, sour cream, and salsa.
