Blueberry Crumb Coffeecake
What you need:
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 3/4 cup vanilla yogurt
- 1 overripe banana, mashed
- 1/4 cup melted butter
- 1 egg
- 3/4 cup rolled oats
- 1 3/4 cup flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 1/4 tsp. salt
- 1 cup blueberries
- 1/2 cup pecans (chopped) - omitted due to allergy in the family
- 1/2 cup flour
- 1/4 cup maple sugar
- 1/4 cup melted butter
- Cinnamon
Directions:
- Mix brown sugar, maple syrup, yogurt, banana, butter, egg, and rolled oats in a bowl. Set aside for 10 minutes.
- Mix flour, baking powder, baking soda, cinnamon, and salt in a bowl.
- Mix both of them together and add blueberries.
- Pour into a greased 8-inch square pan.
- Mix together pecans, flour, sugar, butter, and cinnamon until they form crumbs. Place on top of the blueberry mixture and spread evenly.
- Bake at 375 for 40 minutes or until a toothpick comes out clean when inserted in the center.
