Chicken, Tomato, & Onion Quesadillas

What you need:

    • 1 tbsp. chili powder
    • 2 tbsp. fresh parsley
    • 1 tbsp. olive oil
    • Juice of one lime
    • 1 tsp. salt
    • 1 tsp. cumin
    • 1/2 tsp. red pepper flakes
    • 4 chicken breasts, cooked and shredded
    • 1 large yellow onion, cut into thick slices
    • 2 tomatoes, seeded and diced
    • Tortillas
    • Shredded cheese

Directions:

    1. Combine chili powder, parsley, olive oil, lime juice, salt, cumin, and red pepper flakes. Mix with shredded chicken.
    2. Cook onions until softened in a small amount of olive oil.
    3. Mix in chicken and tomatoes to heat up.
    4. Coat one side of a tortilla with nonstick cooking spray and set in a preheated skillet.
    5. Top with chicken mixture and then cheese on one side. Fold in half. Brown on each side.
    6. Cut and serve!
