Chicken, Tomato, & Onion Quesadillas
What you need:
- 1 tbsp. chili powder
- 2 tbsp. fresh parsley
- 1 tbsp. olive oil
- Juice of one lime
- 1 tsp. salt
- 1 tsp. cumin
- 1/2 tsp. red pepper flakes
- 4 chicken breasts, cooked and shredded
- 1 large yellow onion, cut into thick slices
- 2 tomatoes, seeded and diced
- Tortillas
- Shredded cheese
Directions:
- Combine chili powder, parsley, olive oil, lime juice, salt, cumin, and red pepper flakes. Mix with shredded chicken.
- Cook onions until softened in a small amount of olive oil.
- Mix in chicken and tomatoes to heat up.
- Coat one side of a tortilla with nonstick cooking spray and set in a preheated skillet.
- Top with chicken mixture and then cheese on one side. Fold in half. Brown on each side.
- Cut and serve!
