Three Cheese Chicken Penne Pasta

What you need:

    • 1 1/2 cups penne pasta
    • 1 pkg. (9 oz.) fresh spinach
    • 1 lb. chicken breasts, cut into bite-size pieces
    • 1 tsp. dried basil
    • 1 jar spaghetti sauce
    • 1 can diced tomatoes, drained
    • 2 oz. cream cheese, cubed
    • 1 cup mozzarella, divided
    • 2 tbsp. Parmesan cheese

Directions:

    1. Cook pasta according to directions, adding spinach in the last minute of cooking. Then drain.
    2. Meanwhile, cook chicken in a little oil with basil, until it's not pink anymore.
    3. Add spaghetti sauce, tomatoes, and a little garlic, cook for 3 more minutes.
    4. Stir in cream cheese until melted.
    5. Stir together chicken-sauce mixture with pasta-spinach and 1/2 cup mozzarella.
    6. Place in a casserole dish and top with Parmesan.
    7. Bake for 20 minutes.
    8. Add remaining 1/2 cup mozzarella and bake for 3 to 5 more minutes.
