Three Cheese Chicken Penne Pasta
What you need:
- 1 1/2 cups penne pasta
- 1 pkg. (9 oz.) fresh spinach
- 1 lb. chicken breasts, cut into bite-size pieces
- 1 tsp. dried basil
- 1 jar spaghetti sauce
- 1 can diced tomatoes, drained
- 2 oz. cream cheese, cubed
- 1 cup mozzarella, divided
- 2 tbsp. Parmesan cheese
Directions:
- Cook pasta according to directions, adding spinach in the last minute of cooking. Then drain.
- Meanwhile, cook chicken in a little oil with basil, until it's not pink anymore.
- Add spaghetti sauce, tomatoes, and a little garlic, cook for 3 more minutes.
- Stir in cream cheese until melted.
- Stir together chicken-sauce mixture with pasta-spinach and 1/2 cup mozzarella.
- Place in a casserole dish and top with Parmesan.
- Bake for 20 minutes.
- Add remaining 1/2 cup mozzarella and bake for 3 to 5 more minutes.
