Brown Sugar Bacon Waffles

What you need:

    • 5 slices bacon
    • 3 Tbsp. + 2 Tbsp. brown sugar
    • 2 eggs
    • 2 cups flour
    • 1 3/4 cups milk
    • 1/2 cup oil
    • 4 tsp. baking powder
    • 1/2 tsp. salt
    • 3/4 tsp. vanilla

Directions:

    1. Cook your bacon in frying pan or in the oven (which is my preferred method). Sprinkle 3 Tbsp. brown sugar and cook 3 more minutes without flipping. Remove from pan onto a paper towel lined plate and let cool. Then break into pieces.
    2. Beat eggs until fluffy - mix in milk, oil, baking powder, salt, vanilla, and remaining 2 Tbsp. brown sugar. Fold in bacon.
    3. Cook in a waffle iron according to waffle iron's directions. Serve immediately!
