Bacon Wrapped Pork Roast

What you need:

    • 1 pork loin (1 1/2 lbs.)
    • Salt and pepper
    • 1 tbsp. olive oil
    • 2 tbsp. finely chopped fresh rosemary
    • 1/4 lb. bacon, thinly sliced
    • 1 cup white wine

Directions:

  1. Preheat oven to 375. Pat the pork loin with paper towels to dry. Then sprinkle with salt and pepper.
  2. In a large cast-iron skillet (I don't have one), sear the pork loin in heated olive oil until every side is browned. Then let cool a little.
  3. Rub rosemary on the cooled pork.
  4. Then wrap with bacon. I don't have any kitchen twine but you are supposed to tie it up with that. Bake in the oven for 35 to 40 minutes until it reaches an internal temperature of 145, basting with juices occasionally. Remove and transfer to a serving plate.
  5. **To make the pan sauce, return the skillet to stove and set over low heat. Add the white wine and deglaze. Pour through a sieve into a small saucepan and skim off any fat. Reheat.
