Simply Sinful Cinnamon Muffins

What you need:

Topping:

    • 1/3 cup brown sugar
    • 1/4 cup diced pecans
    • 1/4 cup rolled oats
    • 1/2 cup flour
    • 3 tbsp. softened butter

Filling:

    • 3 tbsp. softened butter
    • 1/2 cup brown sugar
    • 1 1/2 tbsp. ground cinnamon
    • 3 to 4 tbsp. water

Batter:

    • 1/2 cup butter, melted
    • 3/4 cup milk
    • 2 large eggs
    • 1 3/4 cup flour
    • 1/2 cup rolled oats
    • 2 tbsp. cornstarch
    • 3/4 cup granulated sugar
    • 1 tbsp. baking powder
    • 1/2 tsp. salt
    • 1/4 tsp. ground nutmeg
    • 1/2 cup cinnamon chips or butterscotch chips

Directions:

    1. For topping: Mix all ingredients together until crumbly. Save for later.
    2. For filling: Mix together all ingredients (except water). Add water to get a pudding-like consistency. Save for later.
    3. For Batter: Whisk together butter, milk, and eggs.
    4. In another bowl, whisk together the rest of the ingredients.
    5. Add the dry to the egg mixture and stir until just combined.
    6. Divide half the batter in a greased or cupcake paper lined muffin tin.
    7. Dollop 2 tsp. cinnamon filling.
    8. Then top with the remainder of the batter.
    9. Sprinkle with topping and press gently to make it stick.
    10. Bake at 400* for 20 to 25 minutes. Let cool in tin for 5 minutes before removing them to a wire rack.
