Rolo Cookies

What you need:

    • 1 cup butter or margarine
    • 1 cup granulated sugar
    • 1 cup brown sugar
    • 2 large eggs
    • 2 tsp. vanilla
    • 2 1/4 cups all-purpose flour
    • 3/4 cup cocoa
    • 1 tsp. baking soda
    • granulated sugar for rolling cookies
    • 40 Rolo chocolates

Directions:

  1. In a bowl beat butter and sugars until combined. Beat in vanilla and eggs until smooth.
  2. Combine flour, baking soda and cocoa. Stir flour mixture into sugar mixture to form dough.
  3. Chill dough in refrigerator for 1 hour.
    1. Roll 1 tbsp. dough in your hand to form a ball. Press candy into it. Fold sides into the middle and reroll into a smooth ball. Roll in sugar.
  4. Place on a greased baking sheet and bake for 10 minutes at 350, or until tops crack. Cool on wire rack.
