Rolo Cookies
What you need:
- 1 cup butter or margarine
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 tsp. vanilla
- 2 1/4 cups all-purpose flour
- 3/4 cup cocoa
- 1 tsp. baking soda
- granulated sugar for rolling cookies
- 40 Rolo chocolates
Directions:
- In a bowl beat butter and sugars until combined. Beat in vanilla and eggs until smooth.
- Combine flour, baking soda and cocoa. Stir flour mixture into sugar mixture to form dough.
- Chill dough in refrigerator for 1 hour.
- Roll 1 tbsp. dough in your hand to form a ball. Press candy into it. Fold sides into the middle and reroll into a smooth ball. Roll in sugar.
- Place on a greased baking sheet and bake for 10 minutes at 350, or until tops crack. Cool on wire rack.
