Panera Broccoli Cheese Soup (Copycat)
What you need:
- 1 tbsp. butter, melted
- 1/2 medium onion, chopped
- 1/4 cup butter, softened
- 1/4 cup flour
- 2 cups half-and-half cream
- 2 cups chicken stock
- 1/2 lb. fresh broccoli
- 1 cup carrots, julienned
- 1/4 tsp. nutmeg
- 1 (8 oz.) sharp cheddar cheese, grated
- Salt and pepper
Directions:
- Saute onion in butter. Set aside.
- Cook 1/4 cup melted butter and flour using a whisk over medium high heat for 3 to 5 minutes.
- Stir constantly and add the half and half. Add the chicken stock. Simmer for 20 minutes.
- Add the broccoli, carrots and onions. Cook over low heat 20 to 25 minutes.
- Puree in blender, if desired. Add salt and pepper
- Return to heat and add cheese. Stir in nutmeg.
