White Chocolate Macadamia Nut Cookies
What you need:
- 2 1/4 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup unsalted butter, softened
- 1 cup light brown sugar
- 1/2 cup sugar
- 2 large eggs
- 2 tsp. vanilla extract
- 1 pkg (12 oz.) white chocolate chips
- 1 to 2 cups macadamia nuts, chopped (I found these in the beer aisle!)
Directions:
- Mix together flour, baking soda, and salt; set aside.
- In a mixer, cream together butter and sugars until light and fluffy.
- Beat in eggs and vanilla.
- Stir in dry ingredients until incorporated.
- Fold in white chocolate chips and nuts.
- On a lined baking sheet, add cookie dough - I like to use my handy dandy scooper.
- In a preheated 375-degree oven, bake cookies for 9 to 12 minutes, turning sheet halfway through cooking.
- Transfer cookies to a wire rack and cool.
