Lemon Raspberry Oatmeal
What you need:
- 3 cups oats
- 1 1/2 cup plain yogurt
- 1 1/2 cup milk
- 2 eggs
- 1/2 cup sugar
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 lemon, zested, juice from half
- 12 oz. frozen raspberries, thawed
Directions:
- Stir together plain yogurt, milk, eggs, sugar, vanilla, baking soda, salt, lemon zest, and lemon juice from one half of the lemon.
- Stir in raspberries and oats.
- Pour into a coated casserole dish.
- Bake at 375* for 45 minutes.
