Pork Chops and Pineapple Fried Rice

What you need:

    • 1/2 pineapple, sliced and sauteed (I used a whole one - can't beat fresh pineapple!)
    • 2 cups brown rice, cooked
    • 6 whole pork chops
    • 1 Tbsp. butter
    • 1 Tbsp. olive oil
    • 1 onion, sliced
    • 6 Tbsp. soy sauce
    • 1 Tbsp. rice wine vinegar
    • 2 Tbsp. honey
    • 1 Tbsp. hot sauce
    • Salt, to taste
    • 3 cloves garlic, minced
    • 2 whole eggs
    • 1 1/2 cups peas
    • 2 Tbsp. soy sauce

Directions:

    1. Heat butter and oil over medium high heat.
    2. Add pork chops and saute until golden brown on both sides.
    3. Add onion and saute until soft.
    4. Add 6 Tbsp. soy sauce, vinegar, honey, and hot sauce. Cook until thickened. Remove pork and cook for 30 to 45 more seconds. Add salt to taste. Pour over pork chops.
    5. Add a little oil to the pan. Add garlic and stir; cook for a minute.
    6. Crack 2 eggs and scramble.
    7. Add peas, 2 Tbsp. soy sauce, and cooked rice. Fry up for a few minutes.
    8. Serve pork with rice and pineapple.
