1/2 pineapple, sliced and sauteed (I used a whole one - can't beat fresh pineapple!)
2 cups brown rice, cooked
6 whole pork chops
1 Tbsp. butter
1 Tbsp. olive oil
1 onion, sliced
6 Tbsp. soy sauce
1 Tbsp. rice wine vinegar
2 Tbsp. honey
1 Tbsp. hot sauce
Salt, to taste
3 cloves garlic, minced
2 whole eggs
1 1/2 cups peas
2 Tbsp. soy sauce
Directions:
Heat butter and oil over medium high heat.
Add pork chops and saute until golden brown on both sides.
Add onion and saute until soft.
Add 6 Tbsp. soy sauce, vinegar, honey, and hot sauce. Cook until thickened. Remove pork and cook for 30 to 45 more seconds. Add salt to taste. Pour over pork chops.
Add a little oil to the pan. Add garlic and stir; cook for a minute.
Crack 2 eggs and scramble.
Add peas, 2 Tbsp. soy sauce, and cooked rice. Fry up for a few minutes.
