Pork Chops and Pineapple Fried Rice
What you need:
- 1/2 pineapple, sliced and sauteed (I used a whole one - can't beat fresh pineapple!)
- 2 cups brown rice, cooked
- 6 whole pork chops
- 1 Tbsp. butter
- 1 Tbsp. olive oil
- 1 onion, sliced
- 6 Tbsp. soy sauce
- 1 Tbsp. rice wine vinegar
- 2 Tbsp. honey
- 1 Tbsp. hot sauce
- Salt, to taste
- 3 cloves garlic, minced
- 2 whole eggs
- 1 1/2 cups peas
- 2 Tbsp. soy sauce
Directions:
- Heat butter and oil over medium high heat.
- Add pork chops and saute until golden brown on both sides.
- Add onion and saute until soft.
- Add 6 Tbsp. soy sauce, vinegar, honey, and hot sauce. Cook until thickened. Remove pork and cook for 30 to 45 more seconds. Add salt to taste. Pour over pork chops.
- Add a little oil to the pan. Add garlic and stir; cook for a minute.
- Crack 2 eggs and scramble.
- Add peas, 2 Tbsp. soy sauce, and cooked rice. Fry up for a few minutes.
- Serve pork with rice and pineapple.
