Tuscan Chicken

What you need:

    • 3 chicken breasts, halved
    • 1 tsp. olive oil
    • 1 onion, thinly sliced
    • 2 red bell peppers
    • 1 clove garlic, minced
    • 1 1/4 cup pasta sauce
    • 2/3 cup chicken broth
    • 1 tsp. oregano
    • 1 can Great Northern beans, drained
    • Bread crumbs

Directions:

    1. Heat olive oil over medium-high heat. Cook chicken until completely done. Set aside.
    2. In same skillet, cook peppers and onion until tender.
    3. Then add garlic, pasta sauce, broth, oregano, and beans. Stir and simmer for 15 minutes.
    4. In a greased baking dish, pour veggie and sauce. Place chicken on top and then sprinkle lightly with bread crumbs.
    5. Bake for 10 to 15 minutes at 400* until bread crumbs are crispy.
