Tuscan Chicken
What you need:
- 3 chicken breasts, halved
- 1 tsp. olive oil
- 1 onion, thinly sliced
- 2 red bell peppers
- 1 clove garlic, minced
- 1 1/4 cup pasta sauce
- 2/3 cup chicken broth
- 1 tsp. oregano
- 1 can Great Northern beans, drained
- Bread crumbs
Directions:
- Heat olive oil over medium-high heat. Cook chicken until completely done. Set aside.
- In same skillet, cook peppers and onion until tender.
- Then add garlic, pasta sauce, broth, oregano, and beans. Stir and simmer for 15 minutes.
- In a greased baking dish, pour veggie and sauce. Place chicken on top and then sprinkle lightly with bread crumbs.
- Bake for 10 to 15 minutes at 400* until bread crumbs are crispy.
