Southwest Chicken Chili Mac
What you need:
- 8 oz. wagon wheel pasta
- 2 tbsp. EVOO
- 1 cup diced onion
- 1/2 cup diced bell pepper
- 1 tbsp. minced garlic
- 2 cups cooked, shredded chicken
- 10 oz. can Rotel
- 1 1/2 cups chicken broth
- 1/2 cup corn
- 1/2 cup white beans, drained and rinsed
- 1 tbsp. chili powder
- 1 tbsp. cumin
- 1 tsp. dry Ranch seasoning
- 1/4 cup finely chopped fresh cilantro
Directions:
- Cook pasta until al dente. Rinse with cold water to stop cooking process; drain.
- Heat olive oil and add onions and peppers. Cook until softened, about 5 minutes.
- Add garlic and cook for 1 more minute.
- Add chicken, Rotel, broth, corn, beans, 1 cup pasta, chili powder, cumin, ranch, and cilantro. Stir.
- Turn heat to low and simmer until ready to serve.
