Southwest Chicken Chili Mac

What you need:

    • 8 oz. wagon wheel pasta
    • 2 tbsp. EVOO
    • 1 cup diced onion
    • 1/2 cup diced bell pepper
    • 1 tbsp. minced garlic
    • 2 cups cooked, shredded chicken
    • 10 oz. can Rotel
    • 1 1/2 cups chicken broth
    • 1/2 cup corn
    • 1/2 cup white beans, drained and rinsed
    • 1 tbsp. chili powder
    • 1 tbsp. cumin
    • 1 tsp. dry Ranch seasoning
    • 1/4 cup finely chopped fresh cilantro

Directions:

    1. Cook pasta until al dente. Rinse with cold water to stop cooking process; drain.
    2. Heat olive oil and add onions and peppers. Cook until softened, about 5 minutes.
    3. Add garlic and cook for 1 more minute.
    4. Add chicken, Rotel, broth, corn, beans, 1 cup pasta, chili powder, cumin, ranch, and cilantro. Stir.
    5. Turn heat to low and simmer until ready to serve.
