Lemon Chicken
What you need:
- 1/4 cup extra virgin olive oil
- 3 tbsp. garlic, minced
- 1/3 cup chicken broth
- 1 tbsp. lemon zest
- 2 tbsp. lemon juice
- 1 1/2 tsp. oregano
- 1 tsp. thyme
- Salt and pepper
Directions:
- In a small saucepan, combine oil and garlic. Cook for 1 minute on medium low heat.
- Add broth, zest, juice, oregano, thyme, and salt and pepper.
- Pour into a 9x13-inch pan. Add the chicken.
- Brush the tops of the chicken with olive oil. Salt and pepper them, to taste.
- Cut 1 lemon into wedges and add around the chicken.
- Bake at 400* for 30 to 40 minutes.
