Zucchini Bread

What you need:

    • 1 1/2 cups flour
    • 1 tsp. cinnamon
    • 1/2 tsp. baking soda
    • 1/2 tsp. salt
    • 1/4 tsp. baking powder
    • 1/4 tsp. nutmeg
    • 1 egg, beaten
    • 1 cup sugar
    • 1 cup zucchini, finely shredded
    • 1/4 cup vegetable oil

Directions:

    1. Combine flour, cinnamon, baking soda, salt, baking powder, and nutmeg. Make a well in the center.
    2. In another bowl, mix egg, sugar, zucchini, and oil. Add zucchini mixture to flour mixture and stir until moistened.
    3. Pour into a greased loaf pan.
    4. Bake at 350* for 50 to 55 minutes. Cool for 10 minutes.
    5. Wrap and store overnight before slicing, if you can manage.
