Funfetti Layer Cake
What you need:
Cake:
- 1 cup whole milk, at room temp
- 4 egg whites, at room temp
- 1 egg, at room temp
- 2 tsp. vanilla extract
- 1/4 tsp. almond extract
- 2 3/4 cups cake flour
- 1 1/2 cups sugar
- 1 Tbsp. and 1 tsp. baking powder
- 3/4 tsp. salt
- 1 1/2 sticks butter, cubed, at room temp
- 1/2 cup rainbow jimmies
Frosting:
- 3 sticks + 2 Tbsp. butter, cubed and softened
- 3 1/2 cups powdered sugar
- 3 Tbsp. milk
- 1 Tbsp. vanilla
- A pinch of salt
- Rainbow jimmies, for garnish
Directions:
- For Cake: Combine 1/4 cup of the milk, egg whites, egg, and extracts.
- In a stand mixer, stir together flour, sugar, baking powder, and salt with the paddle attachment.
- Add butter on low and mix for 30 seconds. Then add 3/4 cup of the milk and turn the speed up to medium and mix for 1 1/2 minutes.
- Add egg mixture in three batches, beating 20 seconds in between batches. Stir in the rainbow jimmies gently.
- Pour into parchment paper-lined and buttered pair of round cake pans. Bake at 350* for 25 to 35 minutes. Start checking at 20 minutes, using the toothpick test. Let cool for 10 minutes before removing from pans and then cool completely on wire racks.
- For Frosting: Whip butter for 8 minutes.
- Add powdered sugar, milk, vanilla, and salt on low for 1 minute.
- Turn speed up to medium and beat for 6 minutes.
- For assembly: Level the tops of one of the cakes and place it on a cake stand, platter, or plate. Dollop 1 cup of frosting on top and spread evenly. Sprinkle with rainbow jimmies. Top with the other cake and spread a thin layer of frosting to cover the top and sides of the cake. Chill for 30 minutes . Top with remaining frosting and sprinkle to your heart’s content.
