No-Bake Berry Cheesecake

What you need:

    • 2 pkg. graham crackers (I used chocolate)
    • 11 tbsp. unsalted butter, melted
    • 2 tbsp. sugar
    • 2 (8 oz.) pkg. cream cheese, room temp
    • 1 (14 oz.) can sweetened condensed milk
    • 1/4 cup fresh lemon juice
    • 1 tsp. vanilla

For Berry Sauce:

    • 2 to 3 cups berries
    • 1/2 to 1 cup sugar

Directions:

    1. Crush graham crackers and place in a bowl.
    2. Stir in sugar and butter.
    3. Press into pans and freeze for 10 minutes. I used 4 ramekins and a 9-inch pie dish.
    4. Make filling by beating cream cheese until smooth.
    5. Add milk a little at a time and beat until combined.
    6. Add lemon juice and vanilla.
    7. Pour over crust, cover, and refrigerate for 2 1/2 to 3 hours.
    8. For berry sauce, combine ingredients in a saucepan and bring to a boil. Reduce heat and simmer for 15 to 16 minutes and let cool completely. If desired, refrigerate before serving.
    9. Serve cheesecake topped with berry sauce.
