Cheesy Cream of Broccoli Soup

What you need:

    • 2 to 3 cups broccoli florets
    • 9 cups water
    • 5 to 6 Tbsp. bouillon
    • 1 cube butter
    • 1 onion, finely chopped
    • 1 cup flour
    • 2 cups half-and-half
    • Salt and pepper
    • 2 cups cheddar cheese
    • 16 oz. Velveeta

Directions:

    1. Add broccoli, water, and bouillon to a large pot and bring to a boil. Cook for 10 minutes.
    2. Meanwhile, in a skillet, melt butter and then add onion to saute for 5 minutes.
    3. Add flour, stirring until smooth, and cook for 1 minute.
    4. Slowly add half-and-half.
    5. Add this mixture to the broccoli.
    6. Salt and pepper to taste.
    7. Add cheeses and heat until melted.
