Marinated Pork Chops with Pineapple Salsa

What you need:

    • 4 bone-in, center-cut pork chops

Marinade:

    • 1/4 tsp. lime zest
    • 2 limes, juiced
    • 1 tbsp. honey
    • 1 small shallot, chopped
    • 1 jalapeno, deseeded and chopped
    • 1 garlic clove, chopped
    • 1/2 cup olive oil
    • Salt

Pineapple Salsa:

    • 1/2 pineapple, diced and cored, reserve juices
    • 1 tomato, diced
    • 1/2 red onion, minced
    • 1/2 small jalapeno, diced
    • 1 tbsp. chopped cilantro
    • 1 lime, juiced
    • Salt and pepper

Directions:

    1. Mix all marinade ingredients together and place in a Ziploc bag. Add pork chops and marinade for up to 3 hours in the fridge.
    2. Mix all salsa ingredients together while you preheat your grill. Taste to make sure your seasonings are right and let rest for 10 minutes.
    3. Grill pork chops for 5-8 minutes per side on medium and let rest 10 minutes before slicing.
    4. Serve chops with salsa over top.
